Delicious Butterscotch Pie

Clay’s grandmother, Vivian, had been in a nursing home for over 20 years. Last week, her health declined further, necessitating her entry into hospice care. The day before she passed away, we spent the afternoon by her side with family, sharing stories and reminiscing. One wonderful memory that kept coming up was of Vivian and her amazing desserts. Everyone loved visiting her to enjoy the delicious treats she made! However, one dessert that resonated with everyone was her butterscotch pie.

Interestingly, we were discussing butterscotch because it was a topic that Clay and I had connected over a few years ago. While many people gravitate towards flavors like chocolate or caramel, butterscotch is a unique choice. When we brainstormed names for our Mini Goldendoodle, we sought a name that celebrated her golden retriever coloring. We chose Butterscotch, a flavor that both my husband and I love! We shared our naming story with his family, and I mentioned that I should explore our inherited recipes after his mom, Linda, passed away a few years earlier, which I believe were passed down from Vivian.

I have now located two recipes and plan to bake both pies. I love to cook, but I’m not much of a baker, so we’ll see how it goes. We’ll do a taste test to sample the butterscotch pies and make some special family memories of our own!
